If you are in a hurry, want something warm and don't want to spend a lot of money why not not make a quick and simple Breakfast Burrito. Warning this is not a diet food. This is a full flavor, full fat, full everything food. Please don't overeat! However, it is very filling!
Incredients:
Tortillas - flour
Eggs
shredded cheese - 4 cheese or mexican blend
tater tots or chips
Ham, Steak or Sausage (depending on availability or taste)
Mushrooms
green Bell Papers
Salsa
Sour Cream
salt
margarine
Directions:
Depending on how many Breakfast Burrittos you make you will need one large Buritto sized Tortilla per person. Warm up Tortilla for about 30 seconds in Microwave.
Scramble 1 egg per Tortilla (add about a tablespoon of milk in a bowl and scramble if you want a fluffier version) add a sprinkle of salt.
Slice and dice Bell Pepper (about 1/8 for one will do) and sautee in 1 tbl spoon of margarine or butter with the mushrooms. In the mean time depending on taste heat up Bacon, Sausage or steak (small strips cut). I use left over Tater Tots from the night before if available or Chips for the crunch.
Add all incredients in the Tortilla and cover with Cheese. Add Salsa..heat in Microwave for about 20 sec. to melt the cheese and add 1 tblsp. of sour cream. Roll up and enjoy!
HIGH CALORIE COUNT, but very delicious!
